  • What would a concept album about wine be without a song about champagne? This short, uptempo number is about the invention of this sparkling brew, which is usually attributed to the French monk Pierre Pérignon (c1638-1715). "Toutes Les Etoiles" may be translated as "All The Stars." When he first tasted the new blend, Dom Pérignon is alleged to have said "Come quickly, I am drinking the stars!" or words to that effect - and in French, of course!

    The actual development of champagne was rather more complicated, and this quote is almost certainly apocryphal, but Al and his collaborators have given the music a distinctly French flavor in keeping with the words - the chorus of which is in that language - and the song's theme. Al said this is the first time he has composed in French. >>>
