  • In 2007, British soulster Joss Stone told Female First that she wrote this Supremes-inspired romp in response to those who doubted her musical talents when she was growing up. "When I was in school, I wanted to be a singer and everyone said I was crazy," Stone explained. "They'd be like, 'Get your head out of those clouds and come do your math work.' So now I'm telling them, 'Girl, they won't believe it, I finally found some sweet through the bitters of life. All I need is a kiss from a melody.'"
  • This song appears in the 2009 romantic comedy film It's Complicated. The movie stars Hollywood icon Meryl Streep as a single mother who has an affair with her ex-husband, played by Alec Baldwin, 10 years after their divorce. "Girl They Won't Believe It" can be heard during a scene that sees Streep and Baldwin flirting with each other at a bar, before they proceed to spend the night together.
  • "Girl They Won't Believe It" features on Stone's third album, Introducing Joss Stone. She recorded it in collaboration with American producer and Tony! Toni! Toné! member Raphael Saadiq at Compass Point Studios in the Bahamas, where AC/DC famously made Back in Black.

Speaking to MTV in 2006, Stone said how much she enjoyed working with Saadiq: "He just gets me, and musically, everything came together when he came along. For years, since I was 14, I've been trying to tell people what I want to hear. One, they didn't listen to me because I was too young; and two, they didn't know how to listen to me, because they really weren't in the same headspace as me. But he just gets it. Finally someone understands. That's how I feel with him. He wanted to make me happy, and he gave me everything I asked for – and more."
